On the olf Mk5 Gti, i had the steering rack replaced twice for groaning noises / catching turning left !

Yes, if you reduce the amount of "assistance", then you have a more direct "link" between the steering wheel and the tarmac. Too much assistance from PAS is well-known to reduce "feel".
The main dealers can do this for you, and is a well known tweak, but it is usually carried out in the opposite way (increasing the amount of assistance) for elderly or disabled drivers, for easier steering control. One of the many advantages of electric power steering, compared to the old-skool hydraulic assistance.
