would a power steering rack from a mk3 gti/vr6 fit into a mk2 gti if you used the mk3 rack with mk2 track rods and track rod ends

I think it would work actually, afaik all the extra length is made up from the track rods.  it will certainly bolt to the subframe! not sure about the PAS pipes, I think they're the same fittings but not sure.  Other issue is I believe the UJ is different, but you can just fit a MK3 one.

oh nice! in that case i'd channge the whole of the mk3 front over. sub frame, wishbones, driveshafts, track rods the lot! That way you'd be able to mount your VR and get a widetrack front at the same time, with relative ease.

You'd have to be carefull about knuckles though, as VRs would be 5 stud so you would need to swap the knuckles for a 4 stud mk3, also your current engine would sit on the mk3 subframe.

yes you need at least a mk3 subframe (any model will do, some seats have the one you need too) for the rear engine mount, mk3 rack with mk2 narrowtrack track rods bones, shafts etc.  main issue is sourcing the front crossmember as you need a corrado VR6 one, mk3 wont fit.  Might be able to customise a front engine mount to work though.  the MK2 radiator support half of the crossmember can be retained, or you can use a rado vr one.

4stud hubs on 5 stud wishbones dont work well as the wheel ends up off centre in the arch, there was a thread on the vortex showing the balljoint mounting ended up 5mm or so forward or back.  MK3 4 stud or Passat 4 stud widetrack wishbones, track rods n shafts would work, or you could just go 5 stud.

Going 5 stud means you need a different anti-roll bar, no prob if you haver the whole setup but not so good if you already have an uprated eibach set or something, a MK3/Passat 4 stud widetrack setup will work with a MK2 anti roll bar :)
