OK, whilst it is not yet run in, the engine will be very slightly "tight", which will have a small but noticeable effect at worsening the fuel economy. It should start to free up from roughly 3,000 miles, and be nicely run in, and making maximum power after 10,000 miles.
Secondly, the town driving does no favours for fuel economy, whereas constant cruising along the motorways or similar is the best way to get good fuel economy.
Don't forget that because it is a GTI, you will probably be exploring the "smiles-per-mile" attributes, much more than the "miles-per-gallon" attributes!
Did you manage to sort out the bulb which needed changing? If I read your initial post correctly, I think you mean the "puddle" lights in the bottom of the exterior door mirrors - in which case this should help:
