isnt the thermostat in the pipe elbow at the front of the block? I'll get the haynes outa the car boot tomorrow but i wouldnt think it would be inside the water pump....

yeah to get to the thermostat you need to take the PAS pump off, not the waterpump ;)
Follow the bottom radiator hose, where it connects at the other end is the thermostat housing :)

it goes to a plasic elbow on the bottom of the waterpump, which covers the thermostat.  To remove it you need to move the PAS pump out of the way :)

The PAS pump is easy to take off. 2 bolts off and swing it out but watch the pipe connections dont get strained. WHen refitting it - leave tightening the double bolt/gear-nut on the outside till you adjust the bigger "gear-nut" to the right belt tension then do them both up.

Follow the fat bottom hose as rubjohnny says and the wee cover its connected to holds the thermostat. The gasket will need replacing once you disturb it. You could use instant tho I wouldnt. a gasket is only a couple of quid :O)
