Reading down through this quickly, my first thoughts were soon echoed in the comments above, leave the rears unless doing trackdays or high speed autobahn jaunts.
Retrofitting refurbed PP fronts with TCR discs might be an economical option but if overall weight isn’t a huge concern then maybe a mk8 Clubsport front brake assembly might be desirable. I read that they’re quite heavy but they work (at road speeds) really nicely. I’m another that has modified cars all my life but never fitted uprated brakes for some reason. However the mk8 Clubsport brakes have genuinely impressed me as someone who has always been a bit “meh” with VW brakes. Cost might be prohibitive though.
Back in the mk5 days they used to fit Porsche front callipers and there was a guy who sold the kits via forums, before (I think) he went full time and I’m sure he’s still around. Then again I’m old and my memory is sketchy.
