I'm moving to a GTI as well. Everyone gets different fuel economy depending on annual millage, main types of journey and driving style. Expect to get 10-15mpg less on the GTI. The difference will be even more if you do big miles.
The DSG option is personal choice. It is really easy and enjoyable to drive. Though some people prefer the interaction of a manual. If you do a lot of overtaking you will miss a manual. Though I have learned to use the flappy paddles without thinking now. Though it did take some time to become automatic

Some people prefer the feeling and responsiveness from the lighter, smoother, higher revving GTI. Obviously, having more power, the GTI has better performance. However, in everyday driving, this performance is probably only going to be noticeable when overtaking. The GTI has much better acceleration at naughty speeds. As for the noise, well they both use a sound actor (yes, I know).

I see the car you are going to look at will have 19 inch alloys. Many people advise adding the option of DCC adjustable suspension. Though a lot depends on how good the roads are in your area and how you find the ride comfort in your current car. Several owners have damaged their 19 inch tyres/alloys on bad roads.
