No summer tyres will be any good in snow. It's like going out in the snow wearing sandals, your sandals might be slightly better quality with the Goodyear and Continentals, they might cope with icy conditions but they're still not going to be ideal. The tread is designed to offer good grip on dry and wet roads.

To be fair there are "all season" tyres but they compromise on fuel economy by having a much higher rolling resistance.

OP:

Have a look at the link below regarding All Season Tyres. The bar graph compares braking distance of All (Vredestein) vs Summer vs Winter vs Winter+Summer. Makes interesting reading.

Vredestein tyres are recommended for UK conditions even though they rank 3rd in the comparative test.

Yes as AM1W says the Vredestein Quatrac 3 tyre is the best "all season" tyre.

Might be worth using an all season tyre instead of a winter but still retain a summer tyre especially on a gti/gtd or an r?

 I'll be going for Yokohama Advan V105's when I replace my tyres on the Gti next year, I had the V103's on my CTR and found them to be very good all round performance. Blackcircles price looks good too.

If you keep 2 sets of wheels/tyres why use all season, I would only use them on low mileage cars where I could not be bothered to keep two sets. If you do keep 2 sets then go for proper summer and winter, not a down the road compromise (A/S are OK, had some in the past but the are relatively rubbish in hot summer and deep snow).

Just swapped these out for a set of Michelin Super Sports on the spare wheels for the R as when part worn turned out to be woeful and did not respond well to heat, once lap on a sprint course and next two were understeer a go go

Made my decision and will go for the Conti 5s, cheers guys. Will have to wait until January to get tyres replaced and from other peoples comments and experience can't wait!
