Next time it does it you can eliminate 2 of the above by :-
1,lift up the boot carpet and get someone else to turn the ignition on but don't turn the engine over.Can you hear the fuel pump priming ?.If not it's probably the fuel pump relay.
2, take the centre lead of from the distributor and hold it about 3 inches away from the engine block/head.Turn engine over and see if it sparks.
If i remember correctly,ecu relay is number 30,fuel pump is 167 but double check that as i may have them the wrong way around

I suppose it could also be the coil pack itself as they are notorious for failing
