When you unplug the MAF the car runs on stock values loaded in the ECU if you unplug the MAF and the car runs better chances are it's fooked, if you think it runs like poo off a spade unplugged get a new one and it'll be better still.

Do not buy an ebay jobbie MAF or you'll regret it, in my personal opinion get it from VAG, yes it's more but you don't want to gamble on a part like this
ARZ K03s, Oettinger Side Skirts, R32 front, Carbon stage 2, Forge 007p (yellow spring), Forge Actuator (yellow spring), Pipercross panel filter with DSG parts, N249 and N112 deleted, SAI deleted, Carbon canister deleted, Rear wiper deleted, Long Life turbo back custom exhaust with 200 cell sports cat, VR6/G60 clutch kit, Creation Motorsport TIP, Catch can, 'Wellycooler', K04 charge pipe, S3 ported inlet manifold - looks pretty standard on the outside though :)

I ran mine for months off without issues that being said some people have run theirs off for days and had issues, all depends

If you can avoid driving it then do so if not you "should" be fine, just don't boot it everywhere

VW put my SAI there too, it became redundant/ no longer necessary when I fitted my sports cat

Sure did
SAI only warms the cat from cold
