if adjusting throttle cable sorts it out a bit then TB could be shot+ not doing its thing, but then again could be a sensor giving wrong info

I went through the exact problem and done the exact same thing with the cable.
Turned out I had split breather pipes but i played about with the advance and retard before I realised the pipes were split so that was messed up also. Replaced the pipes, set the ignition timing and now runs a dream

noticed the other day when the cars stalling theres a ticking noise from throttle body do they have a iacv (idle air control valve) wondering if this is jamming/failing

Maybe, what year is it.

its a 1995 n reg golf

wondering if the cam belts jumped a tooth? as its got idling issues flat spot from 1k rpm to 2k rpm then picks up but goes past 5k rpm but its got no pull after 5k rpm cambelts well over due for being changed. but its going to the pearly white scrap yard in the sky soon

try cleaning throttle body. The other day when I bought an used throttle body it wouldn't idle because of the amount of oil in it. If it fails then I'd say it could be a problem with the temp sensor at the front of the cylinder head.

I don't think the cable has anything to do with it. By adjusting the cable you have cured the symptom but not the problem.
Look at the vacuum pipes first to see if any are split and clean out the breather, then go from there. Also tap out the air filter if it looks clogged.
Have you run the car out of fuel lately or run it very low? You may want to look at the fuel filter if so.
