Looking at your caliper winders, you should have two. One with a left hand thread, one with a right hand thread.

Most are marked R and L so you can identify which side of the car to use them on.

IIRC the right hand thread is used on the right side, but I wasn't aware the Golf calipers were sided.

Pop the cap of the fluid reservoir and pump the brake a couple of times, it should free up the piston.

erm no, both are the same thread. clockwise to wind in, anti-clockwise to wind out
what you need is a proper wind back tool, need it to put pressure on the piston while you wind it:

As RubJonny just said.....you'll need a proper caliper wind in tool. You can sometimes get away using circlip pliers but it is 1000 times easier with the correct tool. You can end up turning the piston for about half an hour before you realise its not going in! I did this once! Ended up getting a borrow of the correct tool abd it took about 30 seconds.

Also, seemed to make it easier for me to clamp open the rear bias valve

it's also sometimes easier to clamp the flexi hose (assuming you've not changed them for braided) and crack off the bleed nipple before pushing the piston back. but make sure to catch the fluid, can get very messy otherwise
