ok we used to have the same problem with our racing sidecar

we used to hang the calipers high to get the air up , and hold the piston right back , and try tapping the caliper to get the air bubbles to move if they are stuck to hthe inside of the caliper

Take the caliper off the carrier wind the piston back put a piece of wood in to stop the piston coming out turn the caliper so the nipple is at the top and bleed as normal it was the same on mine you could pump up the pedel but then it would go the the floor

yeah i seem to remember people retro fitting mk3 calipers and having the same problem. they look the same so you would assume they go on the same but as they are off a later model and a later design they actually fit the opposite way round.

The problem is if you fit MK3 calipers to a pre 88 MK2, the earlier calipers have the handbrake mech on the toip rather than underneath, hence when you fit the MK3 calipers with the handbrake mech in the right spot the bleed nipple is on the bottom :)
If you have a post 88 MK2 the MK3 calipers are a direct swap.
