205/45/16 or 195/45/16 would be the norm.
If you are going for the stretched look you can get 205/40 or even 195/40/16

Not that clued up on Mk2's, but that sounds like a Mk3 wheel diameter... 40/17, 45/16 and 50/15 (stock).
