well all my metal bits are polished, even the copper bits that are on the brake lines....
tbh i wouldnt reccomend polishing unless you have to time to keep upto it, i polish mine up with the autosol every few days, if not stains can appear, water can damage the finish if your not carefull etc, its ok for me as i make the time to do it, and seen as my cars have always had polished bays its just the norm to me but im guessing for some people it could look crappy pretty quickly
same colour rocker as the car would be good, guy u would ideally want to prime it with a heat resistant paint then spray with normal paint and laquer it
would look fantastic and make your bay look really up to date, i say do it
