I have a standard 91 8v.
Somehow, unless I am imagining it the rear of the car sits lower now than it did 6 months ago.
This is how it looked when I bought it:
Is there anything that would have made my car sitter lower now? Faulty springs/dampers?
If I have someone in the back now the the car regularly bangs against the stoppers.

burst shocks?
If you do change the shocks, change the bumpstops and top mounts

Wouldn't have I noticed burst shocks?
Would this happen over time or would it be a sudden change?

probably over time.
Im no expert but i had burst shocks and it was sitting very low and rubbing on every corner.
how does the ride fell? bouncy?
i think its common with mk2's and jetta mk2's

Sounds like it could be the case with mine.
This leads me to my next question:
Can i just replace the rear shocks, or should I replace all 4?
Are there any aftermarket shocks that are better than VAG *BUT* still give me the standard ride height (I like my car to look stock) oh and not too expensive!

think VR6 knows abit more about shocks.
I would change all four as they are probably gone aswel
Your old oil shocks replaced with gas ones maybe that will help?

It won't be the shocks, the ride height is dependant on the springs fitted, these can sag over time especially the rears, if you keep loading the boot or your rear calipers are seizing.
When changing springs or shocks, always replace an axle set.

my rear calipers were seized when I bought the car so I replaced these.
I know you said replace an axel set but may I as well I replace all 4 springs at once?
Is so are there any I can buy that are better than the VAG ones but still offer the same ride height as standard?
I assume I don't want to mix the front and back springs?
Also do I need to replace the bump stops and mounts as blueMkII mentioned?

eibach ar pretty good, and the fromt and rear springs are so wildly different you cant mix and match them, if you can afford it get some coilovers cos then you can have the ride height etc how you like it but still get improved handling!
