The door switch will be linked to the 'convenience unit' that, if memory serves me correct, is to do with controlling your interior light, central locking, alarm/immobilizer, sunroof etc.
Have you tried a vagcom scan? Mine sometimes comes up with 'intermittantly open circuit' on two of the doors which I don't think is a problem. It just means that sometimes it takes around 3 button presses to fully open all the doors.
I'm just thinking out aloud here really but if there was a problem with that switch it may be causing your interior light to stay on or short circuiting somewhere or causing something else to operate that shouldn't be. An interior light on for more than 24 hours will almost certainly drain enough from the battery to cause starting difficulties.
I don't think it is possible to disable the convenience unit with one fuse, I'm not even certain that a combination of fuses would help.
I'd start with a vagcom scan and see if that sheds any light.
