No ARB on my 1.6 Ryder

I don't have an Anti Roll Bar on my 1991 1.6 Golf MK2 Ryder, but I would like to fit one (to keep my car a little straighter/level in the corners) from a donor car I've seen in the scrappy.

If I get the ARB, 2 Eyelet Bolts from the front and 2 plates & bolts from the rear, is just a straight fit onto my car?

I noticed that my car only has one bolt holding the rear plate that the ARB would go through, but it does have another hole for a bolt to go through it. So what I'm asking, is there already a thread tapped into the shell of my car (Haven't looked that close yet) for the second bolt?

yep all you need:
ARB
Eyebolts
inner bushes
Bush plates
Bush plate bolts

The plates themselves have a thread in them, you hook them in at the front then a bolt goes thru the small hole in the subframe and threads into the clip :)

So.... does it fit with the ends pointing up? as in the pic, or do the ends point down to fit?

I'm pretty sure it goes on as you show there, the ends pointing up.  You can fit the bones to the subframe before you bolt it back up to the car to check its right though!
