I've got a polo k reg 1.0, and i've done most stuff on it, including a clutch.
If you can give me more info about the cutting out problem i might be able to help.
The difficult bits doing a clutch, obviously getting the box in and out, interestingly on the polo it 'looks' like there is plenty of room, but it is still pretty tight.
Getting the starter motor off is a pain, as its at the back of the gearbox, also there is a rear engine/gearbox support bracket that can be difficult to remove, its much easier to remove this complete, and the downpipe support bracket needs to come off, remember how it goes together, as its in several bits!!
Before loosening the bolt and separating the gearshift coupling, make sure you mark it, as you won't get the gearchange back otherwise.
And obviously support the engine when you remove the gearbox mounting.
Anything else you need to know then let me know!

might be worth making yourself as much room as possible,  releasing gear linkage and clutch cable, getting the front end of your car up in the air high as you can, let drivers side engine mount off just a bit (to hold it) dropping rest using a good jack, undo the passenger side driveshaft (gonna be a f000ker) undo gearbox nuts drop weight enough to allow gearbox to slide off. them driveshaft bolts are awkward to say the least, bit of spray oil, clean with the wire brush and smack with the hammer wont hurt, dont forget the clutch aint gonna line itself up and u may need 2 people (les/carol on driveshaft). the box will only drop if u lower engine mark the linkage and hope everything goes back together flush, weathers gonna be nice so get a few beers in:) polos are sh!te! get yourself a proper car and dont listen to muppets
