If it was me, I'd get the donor car then convert the MK2 to 90 spec wiring, then perhaps fit the MK3 dash as well

As you say the wiring isn't plug & play, but tbh the engine loom is pretty much self-contained and you'll only need to splice a few wires to get it up & running. You can use most of your existing loom anyway, things like the MFA, oil temp/pressure sensors/radiator fan etc.
You'll need to strip the engine loom down to the bare minimum, then it should be a case of matching the wire colours using various wiring diagrams. I've got loads if you need em
