Sounds like its running a bit hot if that's happening at night. My temp guage only goes just above the centre mark when stuck in traffic and then fan cuts in. Sometimes if you park up when its very hot the fan the fan will come on for a while after switching off. If you've got PAS, the PAS belt drives the water pump, if its slipping then that might cause high temperature, also the thermostat might be dodgy. Another thing to check is the ignition timing, if its too advanced that can cause hot running...... Also, a daft question it may seem at this time of the year, but does your heater work well?
After a good run I would expect the oil temp to be between 100 and 116, if you're getting high water temp while the oil temp remains low, that's a bit weird unles you've been driving for less than 15min. It takes about 15min to get the oil properly warm.......
