Could be down to carb icing, or perhaps an issue with the carb.  Was the coolant channel o'ring in the inlet manifold replaced when the carb was swapped?  If not then that may be why both the old & new ones arn't working properly ;)

Do you live anywhere near Bracknell?

Your o'ring probably looks like this:

Which will give you all kinds of trouble with the autochoke, and also make it more prone to carb icing as it wont get as hot!

Symptoms: Starts willingly enough, but once warm the idle stays around 1400rpm, but goes back down after standing idling for about 10 minutes or more. Runs on when turned off.
In cold weather, choke comes on again, engine smells of fuel and runs badly around 2000 rpm. Choke completely cured by bridging choke heater thermo-switch contacts, but idle still high.

Yep defo the o'ring, I had exactly the same problem on my old driver till I swapped it, after that the throttle blips to 1.5k for a couple of seconds then drops to 900 and stay there no matter what :)
Its night & day difference :)

It gives a bit more detail on whats involved to change it, its not particularly difficult but getting to the bolts can be a nightmare!  I'm sure there are a few Knights in shining Golfs who live near Essex  :grin:

You could ring up your local VW dealer, while you're there you'll also need an inlet manifold gasket.

O'ring - 035 121 171 C - £2.70+VAT
Gasket - 035 121 171 C - £5.32+VAT

It really isn't hard if you can get the right tool to reach into the gap, a thin wobble extention & hex bit is essential! :)
