Just wanting to know the difference between the two to work out if it's a worthwhile upgrade? Spring rates, ride height etc, non DCC.

I have got a mk8 with 19 "s and the springs that come with the Adelaides. Non Dcc
I had a mk7.5 GTI performance with 19s and DCC I paid for as on option I would not spec DCC again never really used any other setting than normal that much and would never pay to spec it again.
Thats just my opinion and mk7.5 doesn't have the range of settings a mk8.5 does but I think you will just find a setting you like regarded never move it.
