does anyone know if there is a timeout setting on the screen, as it goes back to home page after 30 secs or so. i would like it to stay on the page/screen that i select, until i decide not to.

The only screen that goes away is the ones you access with the physical buttons isn't it? Climate, mode etc

so, if i select climate to turn on heating...etc... i would like it to stay on that screen, helps in these conditions like today, rather than go back to clock mode or app screen.

Definitely not possible to configure from the menus, OBD11 might be able to do it.
You main weapon against fog tho is on the "light and sight" panel to the right of the wheel.... you've got rear heated screen and max blow on the windscreen...
