If you have been using the paddles to shift gear and you want to go back to fully auto mode you hold the paddle for a few seconds and it will go straight back to fully auto.

...unless the gear lever is in the manual position.

It's explained in the manual. You can also go back to full automatic mode by pulling the DSG gear lever towards S mode.
