I've recently seen a post about someone putting a mk4 dash in the mk3 and was wondering whether it could be done with the mk5 dash.

Everything is possible but this would need quite serious CAN bus trickery as the mk5 dash gets so much info over CAN and you'd get a christmas lights show without all connected up....

Would it not be possible to use a different ecu or am I gettinot it confused with something else

No, it is nowhere near as simple.
Using a mk5 dash would require a lot of wizardry..... requiring not hours but probably man months if not years to implement....
