Is the handbrake definitely on if you can't hear any whirring noises when you stop?

Could it be in gear that is stopping you rolling (I know I leave my car in gear) and when you put your foot on the clutch to start it, it starts to roll?

Yes mate its definitely on, its on when i start the car, its just after putting the seat belt in that it lets go. It did it again this morning but not last night and i'm starting to wonder... is it when i reverse park.... I have parked forward today and we shall experiment!
