Dry grip is inversely proportional to rolling resistance (aka fuel economy). More reaction to the road.
Wet grip is inversely proportional to noise. Wet grip is provided mainly by water dispersion channel (aka "tread") and the more efficient will have more, which makes more noise.
Is there a perfect tyre? Of course not, otherwise they all would be making them. Its all about compromise and so its all down to you choosing the balance that you want.
Wear also comes into it (unless you are made of money and racing on a track).
Personally I wouldn't take a tyre with average or less wet grip, because I want to live to enjoy my Golf another day. I'd choose that, then a nice dry grip and stuff the fuel economy and the wearing
