My 1988 Mk2 8v speedo clock goes up to 160mph.  Does this mean that it has definitely been replaced at some point?  I have MOTs going back to 1995 and the mileages all look hunky dory.

Yes sounds like it, the person who did it may have found a dash with near milage when they changed it over so there was no real milage gain or loss come to that.
