I had this.
Scanned it with VAGCOM and it said that the coolant tempt sensor was gone. Replaced at a cost of £30 odd from the stealers.
I also picked up a brand new expansion tank from ECP for £8 and replaced it while it had no coolant in...
Mine was ok to drive though, like yours you'd restart and warning would go away.
