Would be safe to remove the sway bar because my car is lowered 80mm on front and I dont like it rubbing the drive shaft

I wouldn't personally. Why not fit one from a TT/S3/LCR that goes under the driveshaft?

It is fitted for a reason, go for the under driveshaft set up.

if its removed its a MOT Failure i believe.

the mot is just done and my car is low and very stiff so I was hoping that the coilovers would stop the body roll

Coilovers won't stop the body roll, you need the arb.
Just but an under driveshaft one, I got mine for £20 from someone who was breaking a TT.

+1 on the above,
it will roll alot with no arb, and most likely understeer alot
as above i got one for very cheep too. around £40 with drop links
