Running Cold

Hi everyone.
I've got a small problem with my 2002 Golf ( 1.8 20v turbo arz engine ). On a normal drive my water temp needle hardly moves as if the car is running cold. But if I leave it idle for around 10 minutes the needle will move onto the normal temperature ( 90c ) . Start driving again it shoots back down to cold.
Someone said this could be air trapped in the system, others said its a faulty thermostat.
Can anyone in lighten me please as generally the car runs great.

sounds like your thermostat is defo stuck open
