We know APR have cracked the ECU as they run a mk7 race car and probably several developmental road cars. It's just whether the ECU needs to be opened up to re-map. Kinda like the first re-chips I had back on my Leon Cupra many lifetimes ago.
K03 or IHI? Well with REVO on a mk5 it would run about 240bhp and the mk6 around 260 on the rolling road days I attended a few years ago. Different engines though and the mk7 is similar to mk6 but with significant differences so 280 should be easily possible.
