Can you see the water circulating with the cap off the expansion bottle?

It sounds like the coolant is pressurising. And that will be the dreaded head gasket

Dont fear the worst just yet, the hoses are meant to pressurise slightly, are your hose clips up to scratch, is there any chance your oil cooler could be past its best? Are you getting the dreaded sludge on the inside of the oil filler cap and the water filler cap? Also on the dipstick? If you do think it may be a headgasket at least get the cylinders pressure tested, if its overpressurising your water you may have a burnout between cylinder and water ports which will show as a low compression on one (or maybe more).
Mk2 GTi.

Check the overflow pipe from rad to expansion bottle its a tiny pipe have known to have build up of calcium and blocking return flow. Or use a two part rad cleaner first and see if it moves the water better. Just do a test in the expansion water for hydro carbons to see if you do have a leak into the block.

Your symptons are exactly what I had a while back - turned out to be a little blockaege of sh@t inside the radiator where the small bore  overflow pipe joins.  So basically as Clipperjay suggested.
