Our 8v runs at most 102-104, mostly around the mid 90 mark.
We have found differences in using different thickness oils, our car run on Royal Purple Racing 51 (20w/50) in the summer months and then Racing 41 (15w/40) in the winter months, the racing oil tends to break down quicker then Royal Purples industry approved oils due to the property of the Racing oil has no detergents etc. But on the flip side the racing oil runs 6-8 degrees cooler when fresh but your change intervals are much shorter.
The thermostat and the fan switch have been replaced with Neuspeed items in order for the fan to cut in at 180 degrees rather then the 197 standard set-up, the gauge never goes above 1/4 for the coolant, reducing water temperature induces more top end power.
Oil coolers also work very well when position appropriately within an engine bay, in some cases worth an additional 10-15 degrees of cooler running.
