Try removing the slider pins and greasing them

I feel that fitting these callipers is slightly over ambitious for your technical skills if you are asking how to unseize/unstick your current set-up. I run G60s on my MK2 16vt and the only issue is the tyres loose grip rather than a lack of breaking power.

Maybe if you had more control over your loose tyres you wouldn't have issues with how much your car breaks?

It takes a bit more than fitting callipers to test my technical ability

They are overkill on a mk2, light car and as said 280mm set up will be fine.
