Basically most of my detailing stuff tends to come from one of two places.

http://www.polishedbliss.co.uk/Between the pair of them, they pretty much cover 99% of your detailed and cleaning needs. Be aware though, once you start purchasing products it's a slippery slope, and you find yourself "needing" more and more

Mines a White GTD on order (like my Rocco), so waxes are less useful for these white colours (and can indeed turn the white a bit yellowish over time), so a sealant is preferred hence why I use the Werkstat set of products, fantastically easy to use and apply.
However on Carbon Grey, I would probably recommend a good polish followed by your choice of LSP (Last surface product). The polish corrects the paintwork (gets rid of scratches and swirls), and the Wax adds gloss and protection from the elements. I've used Autofinesse Tripple on my wife's Flash Red Polo with superb results, and that's an all in one product, so might be a good idea to start there ?
As for the fabric protection, well there's a number of products on the market, but I've always had good results from Aerospace 303 Fabric Protector (not available unfortunately from either of the above)
