Engine bay rewire

My engine bay has been converted into 60% electricians tape by the previous owners. With so much bodge wiring going on I would like to enquire about getting everything redone. If I bought new sensors all round where would I go to to get everything stripped and redo back to the fuse box. I would do the job myself but I don't know what diodes and resisters certain wires contain and if there are certain wires that must be used in certain areas. Any ideas?

Just get a new loom, mark up the old one then place them side by side and re-fit.

The lighting loom is separate from the main engine loom too.

No diodes or sensors as such on a Mk2 to worry about, just that the removing of the old cables from the fusebox can be an arse.
