Email font on Samsung Galaxy S3

Does anyone know how to change this as when I compose an email on the S3 (Exchange server account and in the Gmail app) the font is like Arial or Tahoma but when the recipient gets it, it's in Times New Roman font which looks poo and doesn't match sending it from your desktop pc.

It will use plain text if the email is plain text and what ever font the original email used if it's HTML from what I've seen - in exchange with the default email app. You can change the font size in the email app.

Gmail is even more useless as you can't change the font size at all from a quick look.

Remember the email needs to be legible on a mobile device, for your benefit.

But for the purest engine experience, displacement has no replacement. All other methods are simply attempts to artificially recreate the benefits of displacement.
