Yes and no a good condition 1 is easily worth that the problem is people that dont really know about car values search for there specific car see a nice number and put it up for the same price !

If you took into account all the extras they have ....
Second hand prices
Headlights £150 ish
Roof lining and trims  £350/450
Wheels with good tyres £400+
Seats and belts £6/700
Speedo £80+
Alli trim £100+
Hand brake £40+
Gearknob mine sold for £95!!!!
Steering wheel £100+
Mats i saw a used crappy set go for 50 odd
Valances/skirts £400 at a push

There all rough prices ive seen but its a good brake down of how much it could cost on top of a standard spec to make a proper rep

To be honest, I wouldn't be expecting a 3K Anniversary to be one of the better examples. If you really want one, maybe try to increase your budget and have a good hunt around and find a properly looked after example. I spent just under six months looking for my own one until I found one I was happy with.

I think there's one or two for sale on the Facebook 25th Anniversary Owners Group. It might be worth having a look in there.
