Spacers..

I was thinking of putting 5mm spacers all around with the original GTI refurbished alloys.. Yes or no?

5mm wont really be noticeable.

Depends how low you are, if you're seriously low then 5mm will make a difference. If not go with wider spacers, just make sure they are hubcentric

Been lowered 60 front and 40 back i believe.. 5mm is the widest i could find unless you have any links for wider ones?

Just type into the eBay search bar : 5x100 wheel spacers and find hundreds of different ones. About 8mm is the maximum you want to go on each hub without using hubcentric spacers and longer wheel bolts. 15-20mm is commonly used with standard GTI longbeach alloy wheels but as mentioned it all depends on how low your car is and what tyre profile you are running.
Personally i'd put 10-12mm on the front and 15mm on the rear, all hubcentric with the longer correct wheel bolts.

That's pretty much bang on, I ran 12mm on the front and 18mm on the rear when I was running standard wheels and they were brought flush with the arches

I'm putting coilovers on at 60-40 for everyday use so what would be ideal spacers for longbeach alloys on 195/50/15's?

think you'll find that dom ran standard alloys so i'd go with what he put ,as his sat spaced out just right imo
