Basically my k03 died
and my k03s came back from being re built I haven't had my car mapped so am I gonna have any problems after fitting the k03s power wise or anything else wise??

It drink sh!t loads without a map will it? Lol I will get a map but need to save for a month or two

Nah, you will be fine without a map. ECU will make the differences in airflow.

Similar question.. my car has already been mapped just with the standard K03 turbo.. If i was to swap for a K03s would the car run the same with just a lower boost? as itl handle the airflow better? or would it need mapped again for the changes?

You need to map it really to the extra 30bhp or so the k03s will give you.
