i know that a brake servo is basically a big vacum container, but is it possiblefor this to pack up? if so what symptoms?

The seals can go, along with the vacuum hose the the inlet manifold.
As for symptoms the braking will feel squashy with a varying amount of braking for required to stop.

I would inspect the M/C the servo is quiet tough and rarely fail! or you have a leak some where along the system.
