water temps , gti 1.8 t aum

hi , my car is not getting up to temp of late and the fuel consumption is high .. the car sits constantly around 60 degrees . I have bought a new thermostat and am about to change out the old one this weekend .  Whilst out and about last night i turned the climatronic off  and low and behold the temps rose to a solid 90 degrees and the mpg rose too .. climatronic ON and the temps slowly start to fall .
Would this highlight a problem elsewhere or is this still pointing to the stat ??

Ive noticed when my climate control on  no matter how hot or cold the car is the radiator fans spin and activate, is this normal??

as I have exactly the same thing as being described but was wondering if its the fans being constantly on with climate control on thats cooling the engine down!?

would you still say its the thermostat or air con related!?

no Fault codes are being shown
