For a quick fix, use the carb head on the injection engine with the gti cam if it is compatible. The carb engine fuel pump should be OK for the 40's, don't connect the vacc to the distributor.

The coil will be fine, I'm sure they are almost all the same, especially between the 1800 & 1600.  If you're worried just nick the coil out of the 1800, the connections will be the same.
The wiring for K-Jet wont actually be that difficult as there isn't much in the way of electrical stuff to wire up, as there is no ECU etc.  The problem will be the fact that on the MK1 the airbox goes on the other side :)

If you want an electric pump ideally you'll want to fit one using the GTI relay so if the car cuts out say in a crash, the pump will switch off.  But I think you might get away with a bigger one designed for a carb engine, it should give you more than enough pressure I would have thought.

Cheers boys. Bit of an update, my mate has gotten hold of a pair of Dellorto 45's. I'm planning on fitting an electric fuel pump to up the fuel pressure at the carbs, use the 1800 gti head with each injector tapped and blanked off and use the gti coil. I'm planning on using the carbs setup as they are, with whatever jets they have in them, to get the car running then take it directly somewhere to get it tuned up properly. I don't know what jets they have in them but i'm hoping that whatever they are for, they'll at least get the car running. I'm hoping to either modify the gti gearbox bracket to the caddy gearbox mount or i may consider getting a mark 1 gti box and using the caddy mount to that. Please send any advice this way, thanks for all the help already. I'm finally starting to get a bit more confdent about this build.

The MK1 gearbox mounts will be fine with either the MK1 or MK2 gearbox, you would only have had a problem if the caddy had a 1.1 or 1.3 engine.  In that case you would need to cut the gearbox mount off and reweld it in the 1.6/1.8 position.
