Been done to death. Take a quick look via the search function in this section.
The ones that always seem to come up trumps are:
Goodyear Eagle F1s -

Michelin Pilot Sports -

Vredestein Ultrac Sessanta -

Note that there are now Asymmetric 2 and PS3s now available.

I would recommend the Asymmetric 2, had both the 1 and 2 on my GTi and both were good the 2 is better. Personally I would go with these over the Continentals (or Dunlops).

I recently put PS3s all round and I'm delighted with them.

Ive had Eagle F1 GSDs and currently have F1 Assyms on. Am tempted to get PS3s next for no other reason than I fancy a change and have heard good stuff.

IMO they are WAY too extreme for your average GTI (I know yours isn't though). They are too much like a race tyre in terms of offering excellent grip (in the summer) but the wear is just too fast.
Great track day tyre.

I've had 2 sets of the Vredestein Ultrac Sessanta now and have found them good in both the dry and the wet.
