Mk4 Water Warning Light Help

Whenever I Start my 1.8t in the mornings, I get a water warning light on dashboard along with the 3 beeps
This does not happen again till next day

Anybody got any ideas what this means

I have checked the water level & is ok

use to happen to mine.. try overfilling the header bottle.. or take the sensor out and clean that way.. mine's been fine ever since.

Does the level probe come out of the header bottle, I had a quick look at weekend but couldnt work it out

It is two metal probes that must work on resistance someway....?

I unpluged the lead and the warning light never went off
