I really want to try some M5 turbines on mine, but with adaptors I'd be looking at a stupid offset.

They do, but that could be due to the general stance of the car and the way the wheels follow the arches.

It's rare to see anything larger than a 17 on a mk3 because they're almost impossible to fit.

By I suppose they could be... I don't know.
