The question remains, why would you want to make a mk3 look like a mk2.

The answer as before is why make one look like a vento, or a mk4??
For me the lights and grill have always been a downside on the mk3 whichever way ya look at it!
Standard are crap looking, mk4s at just minging, mk2s look odd, quad are boring and expensive!
But at least this gives a talking point at a show, gives people something to argue over

I did some research.
Here's an idea, get some ABT or Hella dual rounds and modify them. I happened across these pictures:
This is the blue car I thought did the mk2 conversion but he actually cut ABT rounds in half, removed the second light and reattached the curved end to the single light half:

Another guy did the same:

Dual rounds with the inner light removed for cold air feeds, VW racing did this with some mk3s before:

And this is doing it wrong, mk2 quads on a Jetta. This one is apparently genuine:

This guy put in single rounds and no grille but from his build thread I think he said they were rounds from an E30:

Here's another option, Hella single rounds. Pretty damn rare because they were ugly even in the 90s, but here are some shots from a mk3 rally car:

Certainly gives a few more options, certainly think the mk2 front is still the best, but this is certainly great advice!!

I went searching for ABT single rounds since I knew of them already and then for ABT dual rounds since I heard of people removing one light for an air feed, giving a single round look. I just sort of happened across the rest in the process or from info in other threads.
