The tyre pressures are calculated by VW to allow for axle weights and the sort of speeds the car is designed to be driven at. Therefore within reason the pressures stay the same whatever size wheels and tyres you run.
Obviously a bit of experimentation will only help your personal requirements but don't vary the pressures too far from recommended pressures. If you have a serious accident I'm pretty sure an insurance assessor will check tread depth, tyre condition, speed ratings and pressures these weasels will want to duck out of any payments they can get away with.
