My advice would be to insure it in your own name right from go - you WILL be thankful for the ncb. You'll find the named driver ncb points only work with that particular insurer so you can't shop around in future.
A very small engined mk3, as late as possible so it has factory alarm/immobiliser, park it in a garage, put your parents, aunties and uncles as named drivers (with a lot of insurers the more experienced drivers you add the cheaper it gets). Keep the car completely standard, look after it so you get your money back when you sell it in 2 years to buy a mk2 GTI
